About The Deacon

In medieval Scottish cities, excellence was not a coincidence but the outcome of daily effort and the transmission of a craft. The most skilled workers in each discipline (stonemasons, carpenters, blacksmiths) formed craft guilds to safeguard their expertise. The master craftsman chosen to preside over and lead the guild was bestowed with the official title of Deacon, a term from the Scots language signifying the supreme leader of a craft due to their impeccable skill. From this spirit of mastery without shortcuts emerges The Deacon, a spirit that pays tribute to those who master their art to the point of legend. 

From the most iconic regions of Scotland, this blended malt combines selected malts exclusively from two legendary whisky regions: Speyside and Islay. The raw materials come from the highest quality malted barley, partially dried with peat smoke, the fossilized plant carbon typical of the Scottish isles that imparts those recognisable smoky and medicinal notes. The Scottish climate, characterized by constant humidity, cool temperatures, and Atlantic winds, dictates a slow and balanced maturation in the cellar. The blend unites the soft, fruity elegance typical of the Spey valleys with the deep, saline, and earthy power of the Islay coastline.

The production of The Deacon stands out for its precision in using traditional copper stills, vessels where distillation transforms the fermented barley into a pure and refined spirit. The malted barley is soaked, fermented with selected yeasts to convert the sugars into alcohol, and subjected to a double distillation in copper stills, whose geometry helps retain impurities and impart smoothness. Once the spirit is obtained, master blenders carefully select and blend the various malt whiskies previously aged in oak casks. This maturation in wood adds complexity, vanilla notes, and perfect roundness on the palate before its final bottling.
