About Baldovar 923 Rascaña Merseguera - Macabeo

Rascaña is a white wine aged on lees, made with the Merseguera and Macabeo varieties produced by the Baldover 923 winery in Valencia.

The Baldover 923 winery was born with the aim of recovering the natural cultivation of varieties native to Serranía de Valencia (Alpuente). Jordi Vallès, Juan Alegre Soler, Juan Alegre López and Juan Tárrega lead this project that promotes local varieties such as Merseguera, Bobal and Torrontés. They have a total of 8 hectares of vineyards that are cultivated with minimal intervention, following the lunar cycle and using ecological and biodynamic practices.

The Rascaña wine vineyards are between 20 and 60 years old. Strains that are planted in calcareous soil with a sandy-loam texture at an altitude of between 900 and 1200 meters, and trained using the bush vine and espalier systems. All vineyard work is manual and no chemicals are used.

In the winery, the Rascaña grape is selected manually. It is destemmed and gently pressed. It is then racked at low temperature (8°C) for 24-48 hours. The grape is fermented with native yeasts at a controlled temperature. It is aged for 9 months in stainless steel tanks, with fine lees for the first 4 months.

Rascaña is an orange wine that shows all the typical characteristics of mountain viticulture in Valencia.
2018 Rascaña 2018 is an aromatic white wine with notes of white fruit, citrus and apricots. On the palate it has good acidity, it is complex and unctuous.
