La Revue du Vin de France, one of the most esteemed publications in the wine world, does not bestow praise lightly. To describe someone as "the flagbearer of the ecological generation" acknowledges not only their talent but also their commitment to responsible viticulture and the authenticity of the terroir. This accolade has been awarded to Nicolas Mariotti Bindi, who has emerged as one of the great hopes of the new generation of Corsican winemakers.

His project continues to astonish. An approach that respects the land, the revival of native grape varieties, and a patience measured in months, even years. This spirit is perfectly embodied in Stinzatu, a wine that combines history, soil, and the sensitivity of its creator.

Made from sciaccarellu and niellucciu vines planted on the clay-limestone slopes of Patrimonio, in Corsica, Stinzatu is born from hand harvesting. Each bunch is transported in 300-kilo crates, and after destemming, the grapes rest in concrete vats. A cold pre-fermentation maceration is carried out for 48 hours, and the natural fermentation begins unhurriedly. The cap is gently punched down each day, avoiding any aggressive extraction, to preserve the finesse of the tannins and the wine's elegance.

The ageing process extends for at least 24 months, and bottling is done without filtration or fining. The use of SO₂ is minimal, and the total dosage is clearly indicated on the label, reflecting transparency and respect for the consumer.

Stinzatu articulates the terroir with clarity. Delicate, elegant, with fine tannins and an authentic expression of Corsican ecological viticulture. This wine is a testament to a project that combines tradition, innovation, and passion, confirming why Nicolas Mariotti Bindi has been recognised as one of the leading figures of his generation.
