Zuccardi Fósil is a mountain white wine, crafted from Chardonnay grapes sourced from Paraje Estancia in San Pablo, at an altitude of 1,400 metres and just 600 metres from the foothills of the Andes. Cultivated under extreme conditions, with alluvial soils covered in limestone and a cold climate caressed by Andean breezes, this wine ferments with native yeasts in concrete vessels, without undergoing malolactic fermentation, and is aged in a balance between concrete and used 500-litre unroasted French oak barrels.
