At first glance, its deep cherry red colour captures the eye, while on the nose it unveils an explosion of aromas of plums, blackberries, and blueberries, enveloped in a sophisticated veil of oak wood. Spicy and mineral hints also stand out, with notes of coffee, vanilla, cocoa, and liquorice adding depth and complexity. On the palate, its power and velvety texture are unforgettable, balanced by a savoury acidity and a lingering finish. About Yllera Vendimia Seleccionada

When we speak of the harvest, it is understood to mean the gathering of grapes from the vine, yet upon delving deeper, one uncovers a captivating world full of nuances. The harvest can be conducted either mechanically or manually, and it can take place at various times: when the grapes are green, very ripe, or at their optimal ripeness. Furthermore, it is possible to collect all the grapes from the vine or select only the finest, always striving to achieve the utmost quality in the wine. Yllera, a family of vintners with five generations of expertise and one of the most prominent wine-producing firms in the Castilian-Leonese region of Spain, masters this practice to perfection. So much so that they have named one of their wines Yllera Vendimia Seleccionada, in homage to this meticulous process.

For the production of Yllera Vendimia Seleccionada, the finest grapes of tempranillo, syrah, cabernet sauvignon, and garnacha are harvested. These vines hail from vineyards over 40 years old, cultivated traditionally and harvested manually in boxes with a double selection of grapes in the vineyard and at the winery. There, the best grapes are destemmed, and fermentation begins in stainless steel tanks at a maximum temperature of 28°C. Following the malolactic fermentation, the wine ages for over a year in American and French oak barrels, with racking into tanks for subsequent clarification and stabilization. Finally, it rests for at least another year in the bottle before being released to the market.
