About Stallmann-Hiestand Riesling Geierscheiss Spätlese
There are wines that serve as an introduction, almost like a key. The Stallmann-Hiestand Riesling Geierscheiss Spätlese is precisely that entry point to explore German sweet wines.
The project behind the wine, Stallmann-Hiestand, perfectly embodies that notion of quiet precision that defines many wineries in Rheinhessen. Vineyards spread across towns like Oppenheim, Nierstein, Guntersblum, and Uelversheim, always with a clear focus on classic varieties, especially Riesling, and a style where dryness and definition hold significant weight... even when the category name suggests otherwise.
Because here lies the wine's key: Spätlese.
Within the traditional German quality system, known as Prädikat, there are six major categories that describe the ripeness of the grape at harvest. From the lighter styles like Kabinett, through Spätlese (late harvest), Auslese (selection of very ripe grapes), to the extremes of concentration such as Beerenauslese, Trockenbeerenauslese, or Eiswein, where natural sugar and concentration reach extraordinary levels.
However, there's an important nuance that is often overlooked. These categories do not determine whether the wine will be sweet or dry. They describe the grape's ripeness, not the final style. And that is where modern German Riesling becomes truly fascinating.
In the case of Geierscheiss Spätlese, we have a textbook Spätlese in terms of raw material. That is, grapes harvested slightly late, with more natural concentration, more aromatic expression, and more structure. However, the work in the winery directs it towards a dry and tense profile, moving away from the classic sweet Spätlese image that many consumers still have in mind.
The vineyard it comes from, situated on a southeast-facing slope in Dienheim, on the Rhine terraces, provides a key context. It's a landscape with a continental climate where ripening occurs with breadth, but also with enough freshness to sustain acidity. This combination forms the foundation of the style.
In the winery, the philosophy is straightforward: manual harvest with selection, destemming, and low-temperature fermentation in stainless steel. No embellishments, no wood to alter the profile. Just temperature control, time, and respect for the raw material.
The result navigates that distinctive territory of modern Rieslings from Rheinhessen. And Stallmann-Hiestand Riesling Geierscheiss Spätlese constantly plays between two ideas: the sensation of aromatic breadth and the precision on the palate.
