About Pardas Aspriu Xarel·lo

Winemaker Ramón Parera and agricultural expert Jordi Arnan consider themselves artists of the xarel·ista movement. They and all those who work at Can Comas, the estate at Penedès DO where Celler Pardas wines are produced. In this project, which began 1996, the xarel·lo grape has a fundamental weight, being the soul of many of its wines – three already! The last of them being Celler Pardas Aspriu Xarel-lo.

For Celler Pardas, there are three immovable concepts in winemaking: the character of each vintage, the people and the personality of the soil and climate. This last factor is the most important, ‘the one above’ the rest. In the case of Celler Pardas Aspriu Xarel·lo, it comes from the La Lola plot, a 1.2 hectare vineyard in the Serral del Titet (south of the estate), where the grapes grow under a very particular microclimate. In this case, the bedrock – old, petro-calcareous and poor in organic matter – is the best base for the xarel·lo. This type of soil does not retain water from spring and autumn rains, causing the vines to stress in summer. All these elements inevitably influence the character of Celler Pardas Aspriu Xarel·lo.

Now, it is time to interpret it in the cellar, giving it that personal and unmistakable touch. Nothing external is added. Everything necessary is already in the grapes, which have been harvested and selected by hand. In the cellar, Celler Pardas Aspriu Xarel-lo is pressed (exerting pressures at which half of the yield is obtained) and left to decant at low temperatures to cleanse naturally. Celler Pardas Aspriu Xarel-lo will ferment in two batches: one part (approximately half) in cement tanks and the other in new barrels. Both containers will also be used for aging. The creative process of Celler Pardas Aspriu Xarel·lo will end with a light plate filtration. And that’s it. When the raw material is good, it doesn't take much to get the best version of Celler Pardas Aspriu Xarel·lo, don't you think?

2018 Pardas Aspriu Xarel·lo 2018 is a white wine that astonishes with its distinctive character. Celler Pardas Aspriu Xarel·lo 2015 is a wine rich in character. The nose is very subtle, with hints of ripe white fruit mingling with flowers and herbal notes. The palate is spicy and toasty, ample and enveloping. Dense and very flavoursome.
