Being one of the foremost wine-producing countries, Spain's wine map is far from uniform or predictable. Just ask Grupo Bornos, a venture that has successfully broadened its horizons through seven wineries located in six distinct wine regions across Spain. This relentless quest for the identity of each territory found a truly unique chapter in the DO Rueda. Contrary to market trends, Palacio de Bornos recognised that the verdejo grape possessed extraordinary versatility, capable of transcending conventional still wines. Palacio de Bornos Brut Nature is a sparkling wine that proves when land is cultivated with diligence and without dogmas, its origin can surprise with every bubble.

From the heart of the DO Rueda, in the province of Valladolid, Palacio de Bornos Brut Nature takes root in selected plots where the vineyard's altitude plays a crucial role in preserving the fruit's natural freshness. The vines grow at over 700 metres above sea level, exposed to a Mediterranean climate with a strong continental influence, characterised by harsh winters and a marked temperature fluctuation between day and night during summer. The soils are predominantly gravelly, rich in pebbles and with excellent drainage capacity, forcing the roots to seek nourishment deep below. The variety used is 100% verdejo, cultivated through respectful viticulture aimed at achieving impeccable ripeness and vibrant acidity, with manual harvesting to ensure the fruit reaches the winery in perfect condition.

The production of Palacio de Bornos Brut Nature meticulously follows the traditional or champenoise method, the same system used in the world's great sparkling wine regions. The hand-harvested grapes are gently pressed to obtain a highly pure free-run juice. The first alcoholic fermentation is conducted in stainless steel tanks at a controlled temperature. Following this step, the base wine is created, and bottling occurs with the addition of tirage, yeasts, and sugar, which triggers the second fermentation inside the bottle. It is in this sealed environment that the bubbles are naturally formed. Subsequently, the wine undergoes a minimum ageing of 36 months on its lees, the inactive yeasts that remain at the bottom and impart creaminess, complexity, and finesse. Finally, disgorgement is performed to expel the sediment, and it is bottled without adding any dosage, maintaining the Brut Nature category to showcase the grape in its purest form.
