About Mirgin Reserva Magnum

Mireia and Georgina grew up amidst the whisper of the sea breeze and the scent of fresh must in their family estate. When their father, Josep Maria Pujol-Busquets, decided to create this cava, he wasn't seeking an abstract concept; instead, he intertwined the first letters of his daughters' names to christen his most cherished creation. Mirgin is not just the sum of two people, but a promise of continuity from a pioneering family that revolutionised the area by committing to high-quality, organic, and unadulterated sparkling wines. 

From Alella, the smallest denomination of origin in Catalonia, located just a few kilometres from Barcelona, this cava comes from vineyards situated on slopes facing the Mediterranean Sea. The vines are rooted in the iconic sauló soil, a decomposed granite with a sandy texture and light hue that exceptionally filters water and imparts an unmistakable mineral freshness to the wines of the area. The climate is fully Mediterranean, mild and bright, where the proximity of the sea moderates extreme temperatures, and the constant breeze keeps the grapes in impeccable health. Made with the traditional varieties of the area, such as parellada, macabeo, and xarel·lo, the viticulture is carried out under the principles of certified organic farming, without the use of chemical pesticides or herbicides, promoting the biodiversity of the natural park where the vineyard parcels are integrated.

The production of Mirgin Reserva follows the traditional method with meticulous care at every stage. The grapes are hand-picked in small boxes to prevent the berries from breaking before reaching the winery. Once there, a very gentle pressing of whole grapes is performed to extract only the free-run juice, which is the highest quality and purest juice that flows without excessive pressure. Each variety ferments separately in stainless-steel tanks at controlled temperatures. After the blending or tirage, the wine is bottled with the addition of yeasts and a small amount of sugar to carry out the second alcoholic fermentation inside the bottle itself, the biological process that generates the characteristic fine bubbles. The wine undergoes a minimum ageing of 35 months in the darkness of the cellar on its lees, the inactive yeasts that provide creaminess and aromatic complexity, before disgorgement, the mechanical process where the sediments are removed from the neck of the bottle without adding sugar in the final dosage.

Mirgin Reserva is a cava with a dry, fresh, and deeply elegant profile, where nuances of white fruit, almond blossom, and notes of freshly baked pastry intertwine with a creamy palate and vibrant salinity. It is proof that the passage of time magnifies the finesse of a territory devoted to the sea.
