Mezcal Alipús San Andrés is a young, crystalline, and brilliant mezcal, which moves with subtle density in the glass, as if holding within its transparency all that is yet to be revealed. On the nose, it opens with an unexpected delicacy, where floral and almond notes appear first, giving way to a base of cooked agave, soft caramel, and ripe fruits like perfectly ripened pineapple and banana. On the palate, it presents as silky and complex, with a harmony between herbal notes, an earthy nuance, and a citrus touch reminiscent of orange peel and freshly cut lime. The finish is long and dry, with echoes of pepper and cocoa that linger calmly, like the memory of a place one is reluctant to fully leave behind.

Within this realm, Alipús is crafted as a venture that unites various producer families under a singular ethos: to honour tradition without taming it. In San Andrés Miahuatlán, the craft of master mezcalero Don Valente Ángel preserves that ancient rhythm where earth, fire, and time continue to reign.
 
Mezcal Alipús San Andrés is produced from espadín agave cultivated on high plateaus, where mineral-rich soils impart their mark on its final character. The cooking in an underground conical oven lends a smoky echo that accompanies rather than dominates, while natural fermentation in wood and double distillation in copper refine its expression. On the nose, nuances of cooked agave, fresh herbs, and a mineral undertone reminiscent of wet stone after rain emerge. On the palate, it unfolds with balance, between restrained sweetness and herbal notes that progress with a clean, almost vertical texture, leaving a fresh and slightly spiced sensation.
