Marqués del Real Tesoro Pedro Ximénez is a sweet wine made by Bodega Marqués del Real Tesoro with the Pedro Ximénez variety in the D.O. Jerez-Xérès-Sherry , in Cádiz, Spain.

After the harvest, the Pedro Ximenez grapes used to make the Marqués del Real Tesoro Pedro Ximénez wine go through the usual “asoleo” process of exposing the clusters to the sun, which naturally dries the grapes and makes the sugar, aromas and flavours more intense. It also evaporates some of the liquid, resulting in concentrated musts that are rich in sugars.

Once fermentation has started, the wines are topped up with alcohol and then undergo oxidative aging. Marqués del Real Tesoro Pedro Ximénez ages for years in American oak barrels in the traditional solera and criadera system used for Marco de Jerez wines.
