If you've ever wondered where that pure minerality defining Chablis originates, the answer lies beneath your feet: Kimmeridgian limestone. This soil, formed around 150 million years ago and teeming with marine fossils, allows roots to delve deep, resulting in fresh, elegant wines with character.

In Chablis, few names embody this tradition like Domaine Jean-Paul & Benoît Droin. With over 400 years of family history, Benoît, the fourteenth generation, has successfully blended absolute respect for the terroir with modern winemaking techniques, tending each plot as if it were a treasure. Their 26 hectares are spread across Premier and Grand Cru, including the legendary Les Clos and Vaillons, with each vineyard reflecting the passion of generations dedicated to expressing the essence of Chablis.

Jean-Paul Benoît Droin Chablis 1er Cru Vaillons is a perfect example of this approach. Cultivated on Portlandian soils with pebbles and Kimmeridgian limestone, on plateaus about 200 metres in altitude, this wine combines intense minerality, freshness, and pure fruit. The vinification process honours the terroir to the fullest: gentle pneumatic pressing, natural enzymatic settling for 12 to 24 hours, fermentation with indigenous yeasts in stainless steel and barrel, followed by malolactic fermentation and blending after 8–10 months. Finally, a light clarification, gentle filtration, and early bottling ensure the freshness remains intact.
