About Hibiscus Zibibbo Passito Zhabib
The Ustica lentil, a culinary treasure deeply rooted in its namesake island in the Mediterranean Sea, off the coast of Sicily (Italy), is a unique variety that captures the essence of the region's volcanic and marine landscape. Petite, spherical, and sporting a distinctive light brown hue, this legume delights with its thin skin and subtle flavor. Traditionally cultivated without the use of chemicals or pesticides, this gastronomic delicacy is not only a treat for the taste buds but also a nutritious source, rich in proteins, fiber, and vitamins, shining as a key ingredient in Sicilian cuisine. Yet, this is not the only gem the island boasts. The passito zhabib is a sweet wine emblematic of the Sicilian region, renowned for its exquisite sweetness and complexity. Produced with the indigenous zibibbo variety, one of the wineries that excels in its craft is undoubtedly Hibiscus. A small venture born from a long family heritage, it is committed to organic farming practices, promoting biodiversity, and harnessing solar energy for all its processes.
Sourced from vineyards overlooking the sea, Hibiscus Zibibbo Passito Zhabib is crafted exclusively from zibibbo grapes, locally known as moscatellone d'Alessandria. Vines planted on terraced volcanic soil are organically managed, and the grapes are handpicked and selected with utmost care. Partially dried under the sun on special racks, fermentation takes place in stainless steel tanks at controlled temperatures. The wine then remains in the same vessels for six months during the initial maturation phase, followed by another six months of refinement in the bottle.
