About Finca Moncloa Tintilla de Rota Dulce

When we think of Cádiz, Jerez and its fortified wines, true gems of the region, immediately come to mind. However, Cádiz holds other secrets within its vineyards, and one such secret is Finca Moncloa. This winery has taken the initiative to revive the ancient tradition of producing sweet fortified wines in the region, using an almost forgotten treasure: la tintilla de Rota.

Thanks to the commitment of the González family, this indigenous Andalusian variety, which in the 18th and 19th centuries covered vast tracts of land in the village of Rota and its surroundings, is now flourishing once more in Arcos de la Frontera, imparting a unique complexity and character to the wine.

Their Finca Moncloa Tintilla de Rota Dulce is a wine that embodies the essence of sun, soil, and patience. The process begins by allowing the grapes to overripen on the vine until they reach the ideal concentration of sugars. Following manual harvesting, the clusters are spread out on esparto mats and left to bask in the sun for several days, adhering to the ancient asoleo method, until the perfect sweetness is achieved.

In the vinification facility, the grapes are destemmed, crushed, and fermented over several days, reaching between 4 and 5% Vol. To halt fermentation at the precise moment, 10% vinous alcohol is added to the must. After resting for several months at low temperatures in stainless steel, the wine matures for 12 months in French oak barrels, developing a silky texture and an exceptional aromatic richness.

With Finca Moncloa Tintilla de Rota Dulce, a natural sweet wine from the DO Jerez-Xérès-Sherry, the González family revives a piece of Cádiz's winemaking history, proving that Jerez is not the sole star of this land: there are more secrets waiting to be uncovered... and savoured.
