About Dominio de Bornos Crianza

In the heart of the Ribera del Duero, the Castilian plateau asserts its authority with harsh winters, brief and intense summers, and clear night skies where temperatures plummet mercilessly. It is not a landscape that offers generosity, but rather an austere beauty where each cluster is the result of silent resilience. When a wine group like Bornos operates in this legendary strip, it does so with the utmost respect for centuries-old tradition, knowing that in this land, haste is the enemy of refinement and only perseverance allows the true character of the Duero River to be bottled.

From the iconic town of Pesquera de Duero, in the province of Valladolid, emerges this interpretation of the D.O. Ribera del Duero. Founded in 1988, the winery Dominio de Bornos was established with a focus on a limited and highly selective production of around 100,000 kilograms of grapes per year. The project cultivates 25 hectares of its own vineyards located in the municipality of Valbuena del Duero, at an altitude of 780 metres above sea level. In these plots, the tempranillo vines, aged between 25 and 35 years, thrive on clay and limestone soils that contribute mineral richness. The cultivation philosophy prioritises vineyard balance through reduced yields and ensures the health of each hand-harvested grape.

The production of Dominio de Bornos Crianza is distinguished by a rigorous protocol aimed at extracting the utmost nobility of the variety. After the manual harvest, the destemmed grapes, separated from the woody stems, ferment in stainless steel tanks for a period of 10 to 12 days. This process preserves the primary fruit aromas without extracting harshness. Once the alcoholic fermentation is complete, the wine undergoes malolactic fermentation in the tank. Subsequently, it matures for 12 months in French oak barrels, where it acquires structure and complexity, followed by a further 12 months of bottle ageing before being released to the market.

Dominio de Bornos Crianza is a broad, polished red with impeccable structure. A gastronomic wine, firm and with a long finish that pays homage to the great classics of the Ribera del Duero.
