The Darling region, located on the western coast of the Western Cape, approximately 75 km from Cape Town (South Africa), is an area more renowned for its wildflowers and dairy tradition than its wine, yet an oenological revolution was born there. Just a few decades ago, lands that once fed livestock began nurturing dry-farmed vineyards, in a bold endeavour to capture the essence of the terroir in every glass. Today, that story of transformation and respect for nature is embodied in Darling Cellars De-Alcoholised Syrah, a non-alcoholic red wine that demonstrates that tradition and innovation can go hand in hand.
 
Darling Cellars has built its legacy on the balance between authenticity and modernity. With vineyards strategically situated on the west coast of South Africa, where sunny days blend with the refreshing Atlantic breeze, the winery has skilfully harnessed the diversity of microclimates and soils rich in clay and decomposed granite. This respect for the environment, coupled with constant investment in technology, has enabled Darling Cellars to create wines true to their origin, while keeping pace with the evolution of the contemporary palate.
 
Darling Cellars De-Alcoholised Syrah is a red wine that retains all the essence and structure of a great syrah, yet without alcohol. Crafted from syrah grapes sourced from bush vines, without irrigation, the process begins with a traditional fermentation lasting 5 to 10 days at temperatures of 20-30 °C. Following malolactic fermentation, the wine matures for 12 months in second and third-use barrels and in stainless steel tanks with a combination of French and American oak staves, to add structure and complexity. Finally, it is dealcoholised using the innovative spinning cone technology, a process conducted under vacuum and at low temperature, preserving its aromas, colour, and structure.
