Pairings: Sushi and wine

25/04/2018 Pairings

Sushi is a success throughout Europe. Maki, sashimi and nigiri have fully entered our consciousness. However, the distance that separates us from the Asian continent, and obviously the different flavours, textures and aromas that sushi offers, it makes it a complicated dish to pair with wine.
But don’t worry, that’s why we’re here. To make it easier for you to enjoy sushi with a good wine ;)

sushi

As a focal element, we have the different ingredients used to cook sushi and give it a peculiar flavour that will have to combine with the wine. Raw fish, Nori seaweed, soy sauce and spicy wasabi make Sushi a different meal… and a complicated one when it comes to choosing wine.
For this reason, we are going to select wines with an aromatic and light profile in the mouth. This will prevent it from interfering too much with the intense flavours, but will make it stand out with the their aromatic elements, in the search for harmony.

Here are our recommendations to pair sushi with wine:

Sparkling wine
The sparkling wines we suggest are of a short ageing and with a good acidity, refreshing in each sip.

Guilera Brut Rosat Reserva: This sparkling rosé from Cavas Guilera is a perfect match thanks to its aromas of red berries and its freshness in the mouth provided by the Grenache.

Mas Candí Indomable: Mas Candí offers us a splendid sparkling wine that combines very well with tuna sushi thanks to its very good acidity.

Juve i Camps Milésime: This Millésime de Juvé y Camps praises the most aromatic part of the pairing with this Chardonnay varietal.

White wine
As we were saying, when it comes to pairing wine with sushi we try to find harmony. We have aromatic white varieties that offer us very good combinations, enhancing the most fragrant part of the food and accompanying in the mouth with a drier and fresher wine profile.

Taleia: This Sauvignon Blanc made by Raül Bobet in the pre-Pyrenees, is the perfect pairing for sushi. Its aromatic character marvelously intertwines with a fresh and dry taste.

Barco del Corneta: Wine with a pure Verdejo character made by Barco del Corneta. Fermented in large barrels, it increases its fragrant character to offer a great symbiosis with food.

Frontonio Microcosmico Macabeo: Bodegas Frontonio offers us this wine made with the Maccabeu variety. A high aromatic profile and dry in the mouth, but with some volume. Perfect for the finest sushi like the butterfish type.

Red wine:
Yes, we can also pair sushi with red wine. Of course, when choosing a red wine we will look for a light and fresh profile. We will look for wines from Atlantic climates, such as those from the north of Tenerife or Galicia, or red varieties with little structure such as Callet, Bobal or Sumoll.

Bastión de la Luna: This Atlantic red wine from Forja del Salnés has a citrusy and light profile on the palate. It provides an ideal freshness that will make you enjoy any food.

Gaintus Radical: This wine offers a subtleness in aromas and flavours that interferes delicately with sushi. A safe choice!

La Casilla: Ponce know how to extract the delicacy of the Mediterranean climate and the Bobal variety. A floral and fine wine that will ideally accompany this type of food.

Rosé wine
They are the most versatile wines for all types of sushi. Their wide aromatic profile, and subtle and fresh palate, perfectly accompany this type of food.

Roselito: Bertrand Sourdais produces this rosé wine with a white soul. Perfect thanks to its high aromatic capacity and it fresh and saline flavour that perfectly combines with sushi.

Can Sumoi La Rosa: Can Sumoi offers us a rosé wine with a very fresh profile, ideal from start to finish, and a perfect pairing with all kinds of sushi.

Dido Rosat: Sara and René make this delicate and saline rose wine in Montsant. You cannot ask for more from a wine that pairs with sushi so well.

So now you know! The next time you eat sushi, remember our tips to enjoy a good pairing: aromas, lightness, finesse, freshness.
