Together with his wife Laure—granddaughter of the historic Domaine Hudelot-Noëllat in Chambolle-Musigny—Arnaud has crafted a range of wines that spans from iconic villages to the most coveted crus. Yet, it is not merely about prestige; behind each bottle lies total commitment. Arnaud oversees everything from the selection of grape origins, through vinification, to choosing the wood and precise ageing time for each wine. Everything is meticulously planned to let the terroir speak for itself.

An example reflecting this philosophy is Arnaud Baillot Meursault. This Chardonnay originates in the heart of the Côte des Blancs, within AOC Meursault, in vineyards where approximately 30% are premier crus and 70% are village vineyards, offering a perfect blend of complexity and accessibility. Here, viticulture is sustainable, with manual harvesting, cluster selection, and meticulous monitoring of ripeness parcel by parcel.

In the winery, fermentation takes place in stainless steel, and the wine rests for 12 months in Burgundy barrels, 25% of which are new, achieving a perfect balance between structure, freshness, and aromatic notes. The result is bottled unfiltered, preserving the full expression and personality of the terroir.
