Thomas de Marne Goustan Blanc de Noirs is a biodynamic champagne, crafted from the pinot noir variety by Valéria Frison in the Champagne region.

Thomas de Marne Goustan Blanc de Noirs is a small vigneron located in Cote des Bar, a sub-region in the south of Champagne traditionally regarded as the "poor cousin" of the appellation. In this area, where pinot noir reigns supreme, a group of young winemakers are revitalising their productions with utmost respect for the vineyard. Among this movement, Valerie Frison stands out, an oenologist who began her production with her husband in 2007 when they took over 6 hectares in the village of Ville-sur-Arce. Their respectful work seeks to express the typicity of the terroir, depending on the vine's age and the characteristics of each vintage. Two years ago, the ownership of the winery transferred from Valeri Frison to her son, Thomas de Marne, and with the change, the names of the cuvées were also replaced from Val Frison to Thomas de Marne.

Thomas de Marne Goustan Blanc de Noirs hails from several plots in the south of Champagne with Kimmeridgian and Portlandian soils. Certified as organic since 2003, they have now taken a step further and work biodynamically. The harvest is conducted manually at the optimal moment of ripeness.

The alcoholic fermentation of Thomas de Marne Goustan Blanc de Noirs occurs naturally with indigenous yeasts in used French oak barrels, and the malolactic fermentation is spontaneous. It is then aged in barrels on lees for 6 months and in bottles for 19 months. It is neither filtered nor fined, and no dosage is added, with the SO2 used not exceeding 23 mg/l.
