The yin and yang, a concept from ancient Chinese philosophy, teaches us that life is composed of opposites that complement and balance each other, and that this equilibrium is essential for harmony in the universe. With this same philosophy in mind, Virginie Saverys, an oenologist who staunchly advocates for biodynamics, took over one of the most iconic estates in southern Tuscany (Italy) in 2009. Since she assumed control of Avignonesi, the estate has thrived by finding natural balance, revitalizing the vineyard soils and employing only natural practices.
Inspired by this constant quest for harmony, she presents her wine Avignonesi DaDi Bianco Toscana. A white blend of the varieties orpicchio, vermentino, grechetto, and trebbiano, the name Da-Di means "earth-soil" to emphasize the importance of soil and land in the cycle of life and agricultural production. The vineyard is managed biodynamically, and the harvest is done manually at the optimal moment of ripeness. Once in the winery, each variety is vinified separately. The orpicchio is whole-cluster pressed and fermented and aged in amphorae and used barrels, the vermentino is whole-cluster pressed and fermented and aged in amphorae, the grechetto undergoes six days of carbonic maceration in stainless steel followed by fermentation and aging in used barrels, and the trebbiano macerates for 48 hours with destemmed grapes and ferments and ages in used barrels. After each wine has aged on its lees for about four months, they are blended and bottled.
