About Lustau Pedro Ximénez San Emilio

Lustau Pedro Ximénez San Emilio is a wine produced by Bodegas Lustau located in Jeréz de la Frontera, D.O. Jerez-Xerés -Sherry.

Bodegas Lustau, founded by José Ruiz-Berdejo i Veyan in 1896, has evolved from its beginnings as a stock keeper. Nowadays, they have 3 wineries in the different cities of the Sherry Triangle, Jeréz de la Frontera, Puerto de Santa María and Sanlúcar de Barrameda.

Bodegas Lustau has two vineyards in the Sherry Triangle, Viña Montegilillo, with white clay soils (albariza), very appropriate for the cultivation of Palomino. From this variety they obtains the musts for the production of manzanilla, fino, amontillado and oloroso wines. And Viña Las Cruces, near the coast, with sandy soils where they cultivate Muscatel and Pedro Ximénez, which they use for the production of sweet wines.

Once the grapes are harvested, they are sun-dried (solear) until they are raisined to concentrate all their sugar. Once they arrive at the winery, and after the partial fermentation of the must, the grapes go through an oxidative ageing in American oak butts, following the traditional system of "Soleras" and "Criaderas".

Lustau Pedro Ximénez San Emilio is a sweet, silky and soft wine. The aromas of raisins and figs stand out. In the mouth, it is voluminous, with a long and persistent finish.
