About Enclòs de Peralba El Tòfol

The new generation is proving to be a strong one. Just look at the Gramona family. This is a century-old family business that produces sparkling wines with the Corpinnat European Union Collective Mark in Sant Sadurní del Penedès, and they have seen the sixth generation take over using all the latest technical knowledge, as well as the courage to combine it with their own personal project. This is how Leo and his cousin Roc, sons of the current winery managers Xavier and Jaume Gramona, created Enclòs de Peralba. At this project, they are putting their own vision of wine into practice, showing that history and culture are essential when it comes to growing the best fruit. To do this, they work with old winegrowers in the area who still cultivate old vineyards of local varieties using traditional methods, and they make wines with minimal intervention to achieve the purest expression of the variety and its origin.

With the motto “making Penedès great again” they produce natural wines free from everyone else’s rules. Enclòs de Peralba El Tòfol is a single-variety Macabeo from 52-year-old vineyards on clay and limestone soils. These vines are cultivated using organic and biodynamic principles, and harvested by hand when they reach optimum ripeness. In the winery, an old renovated building sitting among vineyards near Sant Sadurní, the grapes undergo several hours of maceration and then ferment spontaneously with native yeasts in stainless steel tanks. Finally, the wine is aged in 300-litre wooden barrels of different ages for 9 months.

So, championing native grape varieties, biodynamic agriculture and winery work outside the DO, Gramona’s next generation has made an impact. Enclòs de Peralba El Tòfol is proof of this. A pure, sincere and honest natural white wine that vindicates the greatness and richness of the old Penedès.

Enclòs de Peralba El Tòfol 2019 is an aromatic white wine with fragrant notes of white fruit accompanied by citrus touches and chalky hints. On the palate it is clean, fresh and flavoursome. A wine with pronounced acidity, structure and complexity and a mineral finish.
