About Dalamára Naoussa
All roads lead to Rome... and in the world of wine, this implies that there is no single path to achieving excellence. Not all great wine producers emerge from the classical schools of oenology. Some come from unexpected corners, with unique stories and less travelled paths. Like Apostolos Thymiopoulos, who, before becoming the "apostle of Xinomavro", was a traveller, explorer, and proprietor of a wine shop. It was during those journeys across Europe and under the influence of his mentor, the late Haridimos Hatzidakis, that Apostolos realised wine should be simple, fresh, and above all, enjoyable.
Upon returning to the family estate in Naoussa, in Macedonia (Greece), which he inherited following the loss of his parents, he committed to a viticulture that respects nature. His estate is a living ecosystem where monoculture does not dominate. Vineyards coexist alongside goats, chickens, and a biodiversity reminiscent of the Japanese philosophy of natural balance and non-intervention. He translates all of this into his wines, where the xinomavro grape—whose name literally means "acidic and bitter black"—becomes the heart of Naoussa, the Greek region where this red variety reigns supreme.
One of the wines that best embodies this philosophy is Dalamára Naoussa. Produced with organic certification and biodynamic practices, this gem is crafted from vines aged between 10 and 40 years, cultivated in different plots that contribute complexity and character. In the winery, fermentation occurs with indigenous yeasts, and the ageing process extends for 17 months in oak barrels, without unnecessary interventions.
The result is Dalamára Naoussa, a vibrant red wine, with structure and freshness, honouring the variety and the region without losing that casual and honest touch that Apostolos passionately champions. Thus, from an unconventional path, Thymiopoulos demonstrates that in wine, as in life, there are many ways to reach the same destination.
