On the grand façade of the Sanctuary of the Order of the Charismatics of As Ermitas, carved into the stone, stand out two faces popularly known as "Sede y Fame" (thirst and hunger in Asturias). These figures do not depict a physical lack but rather a metaphor deeply rooted in the local tradition; thirst as a symbol of the desire to find truth and fulfillment, and hunger as an expression of the soul's yearning to achieve a higher and more spiritual life.

The same passion and commitment to preserving a legacy drive Bodega Virgen del Galir to cultivate the seemingly impossible slopes of the Bibei River canyon. Restoring these heroic vineyards is not merely an agricultural task but an act of respect, dedication, and fidelity to a history deeply rooted in the land.

Virgen del Galir Sede e Fame As Ermitas emerges as a reflection of that noble spirit, within the DO Valdeorras. A wine originating from a very specific selection of four small plots located in the Paraje As Ermitas. The vines grow at an altitude of 750 metres, facing south-east, on stone terraces built in the early 20th century to claim space from the mountain. The soil comprises decomposed granite sand and quartz schists, a very poor and shallow combination that forces the plant to root deeply. The climate combines Atlantic influence with a pronounced continental character. In this historic vineyard, what is locally termed mesturado coexists, an ancestral blend where palomino vines share the soil with varieties such as mencía, garnacha, godello, merenzao or doña blanca. Adhering to a philosophy of sustainable cultivation, viticulture is conducted using traditional manual methods.

The production of Virgen del Galir Sede e Fame As Ermitas adheres to a profound respect for the fruit. As the latest ripening grapes in the valley, the manual harvest is conducted late. Once in the winery, whole clusters undergo gentle manual pressing and the must begins spontaneous alcoholic fermentation, splitting the wine between clay amphorae and wooden casks. Following fermentation, the wine undergoes ageing and maturation for 24 months in these same vessels, resting tranquilly to refine its structure and gain tremendous complexity without compromising the mineral essence of the soil.
