About Springfield Wild Yeast Chardonnay

Springfield Wild Yeast Chardonnay is a white wine aged on lees and made with the Chardonnay variety by Springfield Estate in the Western Cape South Coast South African wine region.

Springfield Estate is a family winery set up by descendants of the French Huguenots who arrived from the Loire in 1688. Since then, the Bruwers have been enjoying and taking advantage of the area’s climate and geology and their wines are now well-known around the world for their minerality and complexity.

Springfield Wild Yeast Chardonnay is made from vineyards in the Robertson Valley. These are strains with an average age of 14 to 19 years old and planted in rocky quartz and calcareous impermeable soils. These are difficult-to-work terroirs that produce a small and very concentrated berry. The harvest is carried out at the optimum point of ripeness and at night to preserve maximum freshness.

Once in the winery, the Springfield Wild Yeast Chardonnay grapes are vinified with minimal intervention. To do this, they ferment whole in underground deposits with native yeasts for 60 days. Then a slow and volatile malolactic fermentation begins. Finally the wine ages on its lees for 13 months. When the wine is finished, it is bottled without adding sulphur and with minimal filtration.

In the production of Springfield Wild Yeast Chardonnay, they are aiming for the maximum expression of the terroir, and the result is a tasty, fresh and elegant Chardonnay.
2018 Sprinfield Wild Yeast Chardonnay 2018 is a creamy white wine with rich aromas of white and tropical fruits. On the palate it is complex, fresh and well balanced. A fruity, elegant and flavoursome wine right to the end.
