About Paul Cluver Estate Pinot Noir

Paul Cluver Estate Pinot Noir is a single-variety Pinot Noir red wine produced by the Paul Cluver winery in the Western Cape South Coast denomination, South Africa.

The grapes used to make Paul Cluver Estate Pinot Noir come exclusively from Burgundy clones. The berries are thoroughly selected individually before being crushed and then undergoing a cold maceration of approximately 8 days.

The musts ferment spontaneously. Some tanks are inoculated with selected strains of Burgundian yeast.

During fermentation, the “cap”, a layer of skins and solid residues that forms on the must, is broken up by hand twice a day as a sort of punch down to enhance the extraction of colour, aromas and flavours.

The resulting wine undergoes malolactic fermentation in French oak barrels, 32% of which are made from new wood and the rest are second, third and fourth year barrels. Finally, it ages with its lees for 11 months.

Paul Cluver Estate is a century-old house established in the Elgin Valley where it has been a pioneer in developing high quality wine that has put the region on the map as one of the best in South Africa. Being a family business, at Paul Cluver, they care about passing down their values and that spirit that over more than a hundred years has led them to constantly refine all the wines they make, becoming a leading producer of Chardonnay and Pinot Noir.
