About Mezcal Alipús San Juan

It is said that mezcal was a divine gift that descended from the heavens courtesy of the gods: during a storm, lightning struck an agave and cooked its heart. A liquid emerged that began to ferment, giving rise to a sacred nectar that awakens the spirit. In México, it is often said: "for every ill, mezcal; for every good, the same," and Alipús San Juan embodies this philosophy with every sip, showcasing the soul of Oaxaca and the ancestral strength of the land.

Destilería Los Danzantes has safeguarded the tradition of artisanal mezcal since 1996, blending history and technique to preserve the richness of the agaves and the wisdom of the master mezcaleros. Over time, the Alipús project has solidified as a collective endeavour, where several families produce their mezcals in diverse terroirs, keeping alive the authenticity and diversity of Oaxacan mezcal.

Mezcal Alipús San Juan is crafted from agave angustifolia haw (espadín) cultivated on steep highlands with limited sun exposure. The cooking is conducted in an underground conical stone oven, fuelled by wood. It ferments in tall conical oak vats and is distilled twice in copper stills, adhering to ancestral methods that highlight its unique character. Its transparent hue conceals an aromatic richness of caramel, cooked maguey, citrus, herbs, and spices; on the palate, it offers mineral and herbal notes with a fresh acidity that provides balance and persistence.

Each sip of Mezcal Alipús San Juan invites one to discover the essence of México: enjoy it neat, accompanied by coffee, or pair it with traditional Mexican dishes, grilled meats, robust cheeses, or chocolate.
