About Cap de Barbaria Pansit de Formentera

We live in a world that often rewards immediacy, yet truly memorable things require time, pause, and mindfulness. This is precisely where the Slow Food movement finds its meaning—a global philosophy advocating for reconnection with nature's rhythms, respect for local producers, and the safeguarding of authentic gastronomic traditions against contemporary haste. In Formentera, this commitment is neither a trend nor a mere advertising slogan; it is a way of understanding everyday life. Being part of the Formentera Slow Food map, promoted by local institutions, recognises those who tend the land with their hands and hearts. The winery Cap de Barbaria embraced this vision from its inception in 2001, when it planted its first vines at the southern tip of the island. After beginning vinification in 2003 and releasing its first vintage in 2005, the project has established itself as a benchmark of sincere craftsmanship. 

From the small and tranquil island of Formentera, in the Balearic archipelago, Cap de Barbaria Pansit de Formentera is born in a privileged Mediterranean setting where the sea and light permeate everything. The grapes grow in estate vineyards surrounded by native vegetation and exposed to the sea breeze. The vines take root in the area's characteristic soils—stony, low in organic matter, and with a marked limestone component—under the influence of a pure Mediterranean climate with mild winters, warm summers, and very low rainfall. In this unique setting, the Premsal Blanc variety is carefully cultivated, an indigenous grape of the Balearic Islands recognised for its aromatic delicacy, finesse on the palate, and ability to convey the freshness of the island terroir.

The production of Cap de Barbaria Pansit de Formentera is an exercise in meticulous craftsmanship that eschews any industrial shortcuts. After the hand harvest, the whole grapes undergo a traditional process of drying in the shade for 8 weeks. Over these 2 months of rest, the fruit gradually loses water through natural evaporation, concentrating its sugars and acidity without losing the primary aromas of the variety. From this slow dehydration emerges a dense natural syrup that undergoes a very gentle alcoholic fermentation, the biological process in which yeasts spontaneously convert sugars into alcohol. Once fermentation is complete, the wine is not bottled immediately but enters a solera system where it ages for over 10 years. In this dynamic method of barrel ageing, the oldest wines are progressively blended with the younger vintages, imparting unparalleled complexity, maturity, and smoothness.
