Discussing Valerie Frison means talking about one of the luminaries of the A.O.C. Champagne. This vintner from the Côte des Bar has already made history as one of the masters of sparkling wine production. Her formula is straightforward: cultivate healthy grapes to later produce exceptional wines in the cellar. Nothing more, nothing less. And perhaps it is this seemingly simple philosophy (which involves rigorous biodynamic practices) that has been the secret to her champagnes. Her son Thomas has learned from her and inherits this approach, refining it gradually, astonishing with every step he takes.
Thomas de Marne Holistique Brut Nature is a blend of pinot noir and chardonnay originating from Ville sur Arce, a commune in the southern part of the A.O.C. Champagne, specifically from a small plot named Fiole. Since 2003, the vineyards of this distinguished estate, which thrive on soils rich in limestone, chalk, and marl, are certified organic, and are now cultivated entirely biodynamically.
Thomas de Marne Holistique Brut Nature is harvested and swiftly transported to the winery, where it is pressed separately. This method is the only way to preserve the distinct character of each terroir. Similarly, during fermentation, the must of Thomas de Marne Holistique Brut Nature will transform into wine thanks to indigenous yeasts performing their magic in used Burgundy oak barrels. Here, Thomas de Marne Holistique Brut Nature will undergo spontaneous malolactic fermentation and mature for nine months. Unfiltered and unfined, Thomas de Marne Holistique Brut Nature is bottled and then left to rest in the bottle (for approximately 15 to 24 months). After this period, Thomas de Marne Holistique Brut Nature is disgorged, and no dosage or liqueur d'expédition is added.
