About Siderit Hibiscus London Dry Gin 70cl
In the midst of a crisis, David Martínez and Rubén Leivas decided to find a job. And the move was modest but ambitious. They set up their distillery in just an 80 square metre warehouse. From 6,000 bottles a year, little by little, they are now at 250,000 bottles that are sold in more than 35 countries. They have succeeded in making Siderit a benchmark.
This brand is the only one that currently distills in fractionating column glass stills. This type of distiller, which is very common in laboratories and oil works, is rarely used in the drinks industry because of its cost; however, the result is a very pure distillate, equivalent to five distillations in a traditional still. In all their productions they use botanicals like Syderitis Hissopifolia (also known as port tea), a typical herb of the Picos de Europa and the Cantabrian coast, which gives its name to the brand, or the hibiscus flower (always used in Asia, Africa or the Caribbean for its various medicinal benefits).
One of the things they make with these ingredients is Siderit Hibiscus London Dry Gin, a gin made from rye alcohol and triple distilled. The floral aroma, which is the result of a double maceration, is fundamental and characteristic. The first uses 12 botanicals (followed by two distillations to obtain the mother gin) and the second with hibiscus flower (to create the liquid that will be re-distilled to make the definitive gin).
In this process they only use the finest raw materials and spring water from Ortigosa del Monte (in Segovia), with the lowest amount of mineralisation in the country, to make a gin suitable for only the most demanding palates.
