About Sarnin - Berrux Bourgogne Blanc
“To make good grapes you need some sun, but what you really need is light. The sun does not ripen the grapes. It dries them. It is light that drives photosynthesis and creates grapes”. With this in mind, Pascal Sarnin and Jean-Marie Berrux scour the entire Burgundy region (France) to find sun-facing vines owned by certified winegrowers practicing organic or biodynamic agriculture. These raw materials are the highest quality so they can produce natural and lively wines, full of unique charm, in a traditional and ancient way.
One example of this incessant search is Sarnin - Berrux Bourgogne Blanc, a white wine made with the Chardonnay variety from 6 hectares of 40 year old vines planted on clay and limestone soil at an altitude of 274-564 metres above sea level. Biodynamic agriculture is practiced and the grapes are harvested by hand following the lunar phases. In the winery, the grapes are respected as much as possible. No oenological products are used and they are handled as little as possible. First they undergo a cold skin-contact maceration followed by spontaneous alcoholic fermentation with native yeasts in French oak foudres. Finally, the wine is aged in 228-litre French oak barrels for 12 months.
Producing only natural wines and with a modest annual production of about 20,000 bottles per year in total, Sarnin - Berrux have been able to show a new side of the AOC Bourgogne. Sarnin - Berrux Bourgogne Blancs<
