João Tavares de Pina Rufia! Tinto is an organic red wine made by Quinta da Boavista with the Jaen and Touriga Nacional varieties in the DOC Dao, in Beiras (Portugal).
João Tavares is a true organic winegrower who is revolutionising the Beiras region. In an area where the emphasis is on cooperative wine production, João Tavares works in his Quinta da Boavista winery to produce natural wines by recovering lost native grape varieties and making the Quinta energy self-sufficient. As a result, he produces delicious and delicate wines with minimal intervention.
João Tavares de Pina Rufia! Tinto comes from vines growing on granite rock soil with clay, limestone and some shale. They are cultivated using organic agriculture with biodynamic treatments and biodiversity including trees, grass, plants and animals. When the grapes reach optimum ripeness, they are manually harvested in 15 kg boxes.
In the winery, João Tavares de Pina Rufia! Tinto grapes spend 8 to 10 days on the skins and ferment spontaneously with native yeasts in stainless steel tanks. The wine then spends 12 months on its lees in stainless steel tanks. Finally it is bottled unfiltered and with a minimal amount of sulphur.
