About Henri Bourgeois Sancerre Jadis
They say that great wines are born from passion and patience… And if you don't believe it, just look at Chavignol, that charming little village in Sancerre (Loire) where the Bourgeois family has been cultivating vines for ten generations! But it was in the 1950s when everything changed. Henri Bourgeois, instead of following the well-trodden path, ventured into the unknown: a mere two hectares on the village hills. There, he discovered something special, a soil that seemed to have its own voice.
This terroir was no ordinary land. It consisted of Kimmeridgian marl, a geological gem teeming with marine fossils. This detail, which seems museum-worthy, imparts the wine with an almost saline minerality, truly unique. And as if that weren't enough, the estate is managed with sustainable practices: no chemical fertilizers, natural grass growing between the rows, and an absolute respect for the land's rhythm. All of this takes shape in Henri Bourgeois Sancerre Jadis.
And if the terroir speaks, the vinification sings. It all begins with a gentle and delicate pressing of the grapes, followed by two days of natural clarification. No rush here: everything is allowed to settle on its own, without pressure. Then comes the fermentation, which is divided between stainless steel vats (to preserve freshness and aromas) and reused 600-litre oak barrels, which contribute texture without overshadowing the expression of the sauvignon blanc.
Finally, Henri Bourgeois Sancerre Jadis matures for 12 months in those same barrels, with manual bâtonnage (a kind of massage for the wine, stirring the lees) that imparts body, volume, and complexity. And as if that weren't enough, the entire process—racking, bottling—is carried out following the lunar cycles. Because yes, even the moon has a say in this wine.
Furthermore, before venturing into the world, Henri Bourgeois Sancerre Jadis takes some extra time: between 6 and 12 months of resting in vats, to achieve complete harmony. The result is a vibrant, elegant Sancerre with character. A wine that is not just consumed: it is heard, felt, and remembered.
