It must be a source of immense pride to witness one's offspring inherit their calling and perpetuate the family legacy. Indeed, when Elisabeth and her husband Christophe embarked on the meticulous reorientation of the estate's historic plots dating back to 1470 and made the decision to convert all their vineyards to organic practices, their dedication and passion for the vine naturally imbued their three children with the same ethos. So much so that from a young age, their son Ludovic was already experimenting with natural winemaking, and today, he oversees a collection of wines that perfectly mirror the terroir from which they hail, all at most reasonable prices.
Producing wines that are true to their terroir, rich in fruit, complexity, and elegance, Domaine Bonnardot boasts a considerable array of appellations in Burgundy, totaling 18. Specifically, this Domaine Bonnardot Hautes Côtes de Beaune En Cheignot is a single-varietal Pinot Noir from vines situated in Hautes-Côtes-de-Beaune. These are vines over 40 years old, planted in clay-limestone soils at an altitude of 400 meters above sea level, cultivated according to organic principles. The grapes are handpicked and, upon arrival at the winery, are meticulously sorted on the table. The whole clusters then macerate in wooden truncated-conical vats for 20 to 180 days without the addition of sulfur or any oenological products. Fermentation occurs spontaneously with indigenous yeasts, followed by aging in oak barrels for a maturation period of 12 to 18 months. Finally, the wine is bottled unclarified, unfiltered, and without the addition of sulfites.
