Barbera d’Alba designation (one of the many appellations abundant in this region). As its name suggests, this locale is situated in close proximity to Alba, amidst the Langhe hills, where clay-limestone, siliceous soils, and marls are prevalent and where venerable vineyards, aged over 40 and 50 years, contribute to the landscape that was designated a UNESCO World Heritage Site in 2014. Although today most producers cherish this treasure by adopting entirely organic cultivation practices, such methods were not commonplace in the area in the early 1990s. In fact, Mauro Drocco, the latest generation at Azienda Agrícola Camparo, was among the pioneers embracing this philosophy, which is far more considerate of the environment, where all tasks are performed manually and with artisanal care.
The harvest of Azienda Agricola Camparo Sará DOC Barbera d'Alba Rosso, which commences in September and October, is conducted in the same meticulous manner. Promptly, the bunches are transported to the winery, where the grapes are pressed and transferred to stainless steel tanks to undergo alcoholic fermentation. According to the D.O.C. Barbera d’Alba regulations, the wine must comprise at least 85% Barbera grapes. Nevertheless, Azienda Agricola Camparo Sará DOC Barbera d'Alba Rosso far exceeds this threshold, being crafted solely from this varietal. After approximately 20 days, during which the cap is carefully managed to ensure the must remains in constant contact with the skins, Azienda Agricola Camparo Sará DOC Barbera d'Alba Rosso is racked into French oak casks of about 25 hectoliters where it will mature and stabilize for 12 to 18 months. Ultimately, just to be cautious, Azienda Agricola Camparo Sará DOC Barbera d'Alba Rosso is bottled and then left to rest for an additional six months before it is ready for tasting.
