The origins of Barolo date back to the seventeenth century in the eponymous village, whose lands were then under the dominion of the Marchesi di Barolo. The tools employed by this winery are located in La Morra (a quaint village just a ten-minute drive from Barolo), which lies within the production area of this renowned wine. Here, the soil is rich in marl and limestone, contributing to a wine style that is notably aromatic, refined, and fruity. At Azienda Agrícola, the winery owns vineyards in this area that are aged between 20 and 50 years, situated at an altitude of 250 meters, with a southeast to south exposure, and cultivated with an ecological philosophy. This means that all vineyard practices and tasks are carried out manually, including the harvest, which takes place in October.
Once harvested, the grape clusters are transported to the winery where they are pressed and transferred to stainless steel tanks to begin fermentation. This process, during which the must is transformed into wine, is facilitated by indigenous yeasts and lasts between 15 and 30 days. During this period, daily pump-overs are performed to ensure that the skins are in contact with the must, akin to an infusion, to extract color. After this stage, Azienda Agricola Camparo Boiolo DOCG Barolo undergoes a dual aging process. The first stage lasts 24 months in French oak barrels, followed by a minimum of one year in bottles.
