Bonnet-Ponson Seconde Nature Rosé de Macération Extra Brut is a sparkling rosé that has been macerated for 18 hours during production. This step, where the skins remain in contact with the must for a time, is undoubtedly what determines the profile of this sparkling wine, as it enhances the colour, aroma and body of the wines. During this contact time, the grape skin, which contains a large number of compounds, will give the must various elements like anthocyanins (the polyphenols responsible for colour), terpenes (responsible for primary or varietal aromas) and even tannins (other polyphenols that give the wine body and structure). When it comes to Bonnet-Ponson Seconde Nature Rosé de Macération Extra Brut, maceration takes place just after pressing and before fermentation, creating an exceptional quality must ready to undergo the most important process: fermentation. This process, which uses native yeasts and used barrels, is followed by malolactic fermentation.
Bonnet-Ponson always guarantees careful and gentle production, with minimal intervention, where the excellent raw material is not overshadowed by anything. Bonnet-Ponson Seconde Nature Rosé de Macération Extra Brut is grown in Les Teux, Les Bultrus and Le Clos, three Premier Cru plots in Chamery, in Reims (in the north of the A.O.C. Champagne) where 30-year-old vines grow on clay-limestone soils with rock fragments and fossilised shells. Finally, before bottling, Bonnet-Ponson Seconde Nature Rosé de Macération Extra Brut spends nine months on its lees, finishing forging that terrifically amazing character that gets people hooked.
