About Bonnet-Ponson Seconde Nature Champagne Chamery Premier Cru Brut Nature Blanc
Gentleness and care are two of Bonnet-Ponson’s hallmarks. This sparkling wine house in Reims, north of the A.O.C. Champagne, scrupulously strives to keep its wines in the purest state, with no alterations that could mask the full spirit and flavour of the territory. For this reason, minimal intervention is more than guaranteed and is reflected in productions like Bonnet-Ponson Seconde Nature Champagne Chamery Premier Cru Brut Nature Blanc, a sparkling wine made entirely without sulphites, without clarification or filtration.
This type of winemaking is largely attributed to Cyril Bonnet, the sixth generation of this family that has been dedicated to winemaking since 1862. Following the family tradition and in the footsteps of his ancestor Grégori Bonnet (the winery founder), Cyril is now in charge, overseeing the work on the 10.5 hectares where the magic of his wines is born. Although quality has always been this winery’s ultimate goal, Cyril Bonnet can boast of having taken the ultimate step by completely eliminating the minimal doses of chemicals and sulphites used by his father and grandfather. This is the only way he has managed to definitively achieve organic certification.
Bonnet-Ponson Seconde Nature Champagne Chamery Premier Cru Brut Nature Blanc is made from a coupage of Pinot Noir, Chardonnay and Meunier grown in vineyards aged over 30 years old planted in Les Vigneules, Les Spectres and Les Caquerets, three south-east facing Premier Cru plots. The wide variety of soils, with a mixture of clay, lime, sand, rocks and fossilised shells, give the wine depth and nuances.
Following a manual harvest, the grapes arrive at the winery where they undergo their first fermentation with native yeasts in used barrels. The grapes are pressed before this, and they only use the Coeurs de Cuvée (the heart of the pressing containing the highest quality juice). At this key stage, where the must finishes becoming wine, Bonnet-Ponson Seconde Nature Champagne Chamery Premier Cru Brut Nature Blanc spends nine months on the lees before bottling.
