Aries Wines Argali Syrah 2021 is an intense, dark red wine that captivates with its aroma of clove, nutmeg, and a floral hint of rosehip tea. Upon tasting, it reveals a subtle tension that unveils a precise structure, evolving with notes of pepper and a delicate presence of tannins. About Aries Wines Argali Syrah

To achieve success in any profession, theoretical education is crucial, yet it is insufficient on its own. It is imperative to complement learning with practical experience. A prime example of this principle is Paul Boeuf, a wine enthusiast who, owing to his robust academic background in agricultural engineering and extensive experience in various wineries in Burgundy (Maison Boisset, Joseph Drouhin, Domaine Roulot) and Patagonia (Domaine Chacra), has managed to develop the necessary tools to bring his own project to life: Aries Wines. It all began when Paul arrived in the breathtaking mountains of Valais, Switzerland. There, he was captivated by the steep slopes and the small terraces of the valley, which seemed tailor-made for his way of living the vineyard. It was in this exceptional setting that he saw the perfect opportunity to apply all his knowledge in biodynamics and viticulture.


A work philosophy reflected in Aries Wines Argali Syrah, a single-varietal syrah from the cotaux of Conthey. A vineyard situated more than 400 metres above sea level, bathed in the sun of the Alps, cultivated organically with biodynamic treatments, always considering the lunar cycles. In the winery, the hand-harvested and selected grapes are destemmed and crushed to commence fermentation in stainless steel tanks with indigenous yeasts. Subsequently, malolactic fermentation is carried out for 18 months in 400L and 228L two-year-old barrels.
