About Miranda

If there is one thing César Ruiz possesses, it is friends. After years immersed in the world of wine as a partner of the distributor Alma Vinos Únicos and the iconic Madrid shop La Tintorería, his journey has always been surrounded by shared bottles and fellow travellers. His venture into winemaking in the region began with Mandrágora Vinos de Pueblo, a project where the drive and desire to revive vineyards set the pace. However, the definitive impetus to shape something deeply personal came from the genuine encouragement of those around him. Thus, César decided to return to his roots to bring Viñas Serranas to life, a project that pays homage to camaraderie, conversations that solve the world's problems, and the certainty that the best projects are those built surrounded by the people you love.

From the picturesque village of Miranda del Castañar, in the province of Salamanca, his wine Miranda embodies the purest essence of the DOP Sierra de Salamanca. The wine originates from iconic plots located at an altitude of 750 metres above sea level. In this mountainous environment with steep slopes, the old vines, reaching up to 95 years of age, struggle to survive on sandy loam soils of granitic origin. The elevation of the terrain and the transitional climate of the area offer a thermal contrast between day and night that is essential for maintaining the acidity and freshness of the grape. The undisputed star is the indigenous variety rufete, a delicate and complex grape that finds its natural habitat in this mountain viticulture and respectful cultivation. True to the commitment to the environment, the grapes are harvested through careful manual picking.

In the winery, Miranda follows a process that is highly respectful of the fruit and the landscape. Once the clusters arrive at the winery, alcoholic fermentation begins spontaneously with the vineyard's own native yeasts in stainless steel tanks. This approach preserves the fruit's honesty and the aromatic nuances of the estates. Once fermentation is complete, the wine undergoes ageing for 13 months in 2,500-litre French oak foudres. The use of these large wooden vessels allows the wine to round out, gain complexity, and acquire volume on the palate without the wood overshadowing the fresh and mineral profile of the granitic terrain.
