About Jean-Yves Péron Côtillon des Dames

Jean-Yves Péron Côtillon des Dames is a natural orange wine with no added sulfites, made from white grape varieties such as Jacquère and Altesse by Jean-Yves Péron in Savoie, France.

Jean-Yves Péron, a Saboyard vigneron, works on two hectares of micro-plots located at the confluence of the Arly and Isère rivers, 600 metres above sea level, in the region of Conflans, Savoy, where terraces on steep slopes predominate, and the soils consist of shale and calcareous material. Here he cultivates his vines without chemical inputs and with the utmost respect and understanding of nature.

Jean-Yves Péron Côtillon des Dames is an inimitable wine because it is vinified using oenological techniques that are common in the production of red wines. First, the vines are harvested manually to respect the grapes as much as possible. Once in the cellar, the bunches are then inserted into vats whole and without destemming or pressing in order to undergo a semi-carbonaceous maceration, i.e. to start a spontaneous fermentation with their native yeasts inside each grain. Lastly, Jean-Yves Péron Côtillon des Dames is aged in oak barrels for twelve months with its lees. The wine contains no added sulphites.

The maceration of the must with the skins of the grape results in an orange wine or vin orange, named thus as a result of its darker colour, practically orange, which differentiates it from a normal white wine. Jean-Yves Péron Côtillon des Dames is a complex, deep and mineral wine that is lively and aromatic. In short, a great discovery.

2017 Jean Yves Péron Côtillon des Dames is a natural orange wine with a deep, mineral profile, with a pleasant nose reminiscent of exotic fruit and yellow lemons with a hint of honey. A wine with a long life that will continue to evolve in the bottle.
