André Beaufort Polisy Brut Rosé is an effervescent and fruity sparkling wine, exuding scents of cherry compote, hints of cinnamon, and menthol nuances. About André Beaufort Polisy Brut Rosé

Dizziness, nausea, muscle aches, and digestive issues are just a few of the symptoms experienced by those with allergies to synthetic chemicals. Therefore, it was no surprise that in 1969, when the father of André Beaufort discovered he was afflicted by this condition, he ceased conventional wine production entirely and steadfastly transitioned to organic farming. Since then, his 6.5 hectares of vineyards in the Champagne region, some in Grand Cru in Ambonnay and others in Polisy in the Aube, have been free from any synthetic treatments. Similarly, in the winery, minimal intervention is sought, fermenting with indigenous yeasts and bottling after a prolonged aging on lees. This is something that is pleasantly noticeable and distinguishable among the hundreds of champagnes bottled that currently coexist in the market.

His André Beaufort Polisy Brut Rosé is a champagne made from the pinot noir variety sourced from the vineyards located in Polisy. Organic agriculture is practiced, and the use of copper sulfate in the vineyard is avoided, preferring instead to use essential oils and proprietary homeopathic preparations. The soils are left untreated, and the harvest is done manually at the optimal point of ripeness. In the winery, the must spontaneously ferments with indigenous yeasts in French oak barrels and, following the traditional method, undergoes a second fermentation in the bottle. The minimum aging period is 72 months, and the disgorging (the date is printed on the label) is done by hand "à la volée" after approximately one month of riddling on the pupitre to converge the sediment towards the neck of the bottle. At this point, the "liqueur d'expédition," made from concentrated grape must, is added.

With a sanguine orange hue and a vinous character, André Beaufort Polisy Brut Rosé is a sparkling wine that transports us back to the original champagne, the one that prevailed before the adoption of industrial agriculture.
