About Don Px Convento Selección
Don Px Convento Selección is a sweet wine made by Toro Albalá with the Pedro Ximénez variety in the D.O. Montilla-Moriles.
Toro Albalá is one of the leading wineries in the D.O. Montilla-Moriles. Founded in 1844 by Antonio Sánchez Prieto in the town of Aguilar de la Frontera (Córdoba), they have held old wines with the intention of turning them into treasures with their own style. A legacy that is now carried by his nephew Antonio Sánchez with his two great areas of expertise; Amontillados and Don P.X.
Don Px Convento Selección comes from vineyards planted in the Moriles Alto area of Cordoba. The terroir is full of Albariza, a whitish soil that compacts to form rocks and allows the region’s rare but heavy rains to be stored in the subsoil all year round. The harvest happens late and once harvested, the grapes dehydrate in the sun.
This sun drying results in a must with an extraordinary concentration of sugars. Don PX Convento Selección then undergoes oxidative aging in American oak barrels over the years.
