Wines to pair with mushrooms
Mushrooms and fortified wine make a heavenly pairing!
Mushrooms are rich in umami, the fifth basic taste (after sweet, salty, bitter, and sour) found in foods we describe as very flavorful. Umami enhances gustatory satisfaction, and for umami-rich foods, an aged chardonnay makes an excellent pairing.
It is well known that a red wine made from cabernet sauvignon is a perfect companion for a fine cut of meat, but -attention, vegans- dare to try it with a plate of Portobello mushrooms. You will love it!
Mushrooms often share aromatic nuances with certain varieties, such as pinot noir, with which they pair wonderfully, or with wines that have undergone barrel aging. The secret to a good pairing is to seek balance between the intensity of the mushrooms and the wine.
