About Château Margaux Pavillon Rouge

So similar that we could say they are twins. Its quality closely rivals the house's premier wine, yet it retains its unique characteristics. Despite the differences, Château Margaux Pavillon Rouge, the second wine of Château Margaux, has nothing to envy.
 
Although initially, the raison d'être of Château Margaux Pavillon Rouge was merely to enhance the quality of its elder sibling, over time this blend of cabernet sauvignon, cabernet franc, merlot, and petit verdot has proven to be worth its weight in gold. The journey has not been easy (between 1930 and 1970 its consumption declined); however, the Greek André Mentzelopoulos, the current owner of the winery, revived it and restored all the glory it should never have lost. Now, only 30% of the harvest is devoted to its production, always reserving the best clusters for fermentation. This is achieved through thinning, a practice where some clusters are removed before they reach maturity. This effort, where Château Margaux was a pioneer in the Médoc, helps to refine the quality of the younger vineyards, allowing the plant to concentrate its efforts on fewer grapes.
 
This level of quality is meticulously maintained in the winery, where all the grapes of Château Margaux Pavillon Rouge must be handled with utmost care. Undoubtedly, the most crucial moment will be the fermentation, taking place between stainless steel tanks and wooden vats. During this process, a stringent temperature control is carried out, ensuring that the yeasts can work seamlessly until the end. Once all the must has been converted into wine, Château Margaux Pavillon Rouge is racked and left to macerate, opting for extraction by gravity. This very gentle and particular method allows the liquid to separate from the solid parts by its own weight. Once this is achieved, Château Margaux Pavillon Rouge will undergo malolactic fermentation. The ageing in barrels for several months will be the final touch.
 
Despite its challenging years, Château Margaux Pavillon Rouge shines once again. And it does so more than ever. Although it is second in line, it has carved out its own place among the greats. Cheers to Château Margaux Pavillon Rouge!
