Sommos Reserva is a wood-aged red wine produced by the Sommos Winery in the D.O. Somontano (Aragón) with the Syrah, Merlot, Tempranillo and Cabernet Sauvignon red varieties.
Located in the heart of Somontano, Sommos is a spectacular new winery built around 355 hectares of their own vineyards. Their building is a glass and steel prism that is perfectly integrated into the environment and reaches down as far as 27 metres below ground to optimise every production process and make the most of a climate and soils with great winemaking potential.
Sommos Reserva comes from a vineyard located in the Finca de Montesa. These vines are planted on sandy-loam soils with little organic matter and producing an average of 4,500 kg / ha. They are cultivated using traditional agriculture and the harvest is carried out mechanically and separately at night to preserve all the characteristics of the grape.
In the winery, the Sommos Reserva grapes pass over the selection table and vatting happens by gravity. Fermentation takes place at a controlled temperature of between 26º and 28º, followed by a maceration of around 15 days for the Cabernet and Merlot varieties and 5 days for the Syrah variety. Following malolactic fermentation in cement tanks, the wine finally ages in 1- and 2-year-old French oak barrels for 12 months. After this, the final coupage is made.
Sommos Reserva is the result of a collaboration between tradition with innovation. A classic and elegant but also avant-garde way of interpreting the Somontano wine region and making it known around the world.
