Sextant Po à Po is a natural and organic orange wine made by Sextant in Burgundy with the native Aligoté variety.
Despite not being from a winemaking family, Julien Altaber was keen to get into the world of wine anyway. This is fairly unusual and particularly difficult to do in Burgundy. With the help of Dominique Derain, he set up his Sextant project near Puligny and began making his own natural wines with minimal intervention.
Sextant Po à Po comes from a north-facing vineyard with a great terroir and clay-calcareous soils near the prestigious village of Pommard. He uses ecological agriculture without the use of chemical products, choosing biodynamic treatments instead. The harvest is carried out manually and placed in small boxes.
In the winery only 50% of the Sextant Po à Po grapes are destemmed and macerated with skins for 12 days. Then alcoholic fermentation begins with native yeasts and fine less in barrels for 5-10 years. It is bottled without being filtered, clarified or adding sulphur.
Sextant Po à Po is a great way to try a natural white wine macerated with skins that has an oxidative style and is full-bodied with a delicious and slightly bitter finish.
