Coume de l'Olla Matassa is a natural red wine blend of Grenache, Grenache Gris and a little Macabeo from the Languedoc-Roselllón area, produced by Domaine Matassa.
Domaine Matassa is a winery founded in 2001 by Tom Lubbe, a New Zealander who grew up in South Africa. The winery cultivates its strains of Grenache, Carignan and Monastrell.organically and biodynamically at an altitude of over 450 metres. Their yields are very low, about 3,500 kg per hectare and the grapes are vinified with native yeasts and using very low levels of sulphites. Its wines are pleasant, fresh and vibrant.
The vineyards for Matassa Coume de l'Olla are found in plots with clay-calcareous soil and ferrous rocks located between 450 and 650 metres above sea level. The vines are old, their yields are very low - about 25 hectolitres per hectare, and they produce concentrated and balanced grapes.
The three varieties for Matassa Coume de l'Olla are fermented together with native yeasts in concrete tanks. The must-wine macerates with the skins for 10-14 days. Once fermented, the wine is aged for 7 to 8 months in used French oak barrels that are 4 years old.
Matassa Coume de l'Olla is a natural, calm, fruity and juicy red that can be enjoyed from now until the next three to five years.
