Páramos de Nicasia Blanco is a white wine, D.O. Rueda, produced by the winery Máquina & Tabla.

 

Máquina & Tabla is a project that began in 2012 thanks to Oriol Illa and Susana Pastor. Starting from scratch, they visited the entire region, searching for the best vineyards, the oldest ones.

Máquina & Tabla cultivates the vines using biodynamic parameters, with utmost respect for the land and nature. They make top-quality wines with minimum intervention, in rented facilities, as of right now.

It seems like hard work is paying off: Máquina & Tabla normally appears in the best positions of specialised magazine rankings.

 

Páramos de Nicasia Blanco is a wine made from Verdejo from old vineyards located at around 700 metres of altitude, planted on clay and rock soils, with very low yields.

After the grapes are harvested, and once they arrive at the winery, they go through a pre-fermentation maceration in cold for 12 hours. After a soft pressing, they ferment with native yeasts in concrete vats, stainless steel deposits and used 225-litre French oak barrels. After the fermentation, they age for 11 months in concrete vats, 6 of which they stay in French oak barrels.

 

Páramos de Nicasia Blanco is a profiled, intense and balanced wine. Very clean on the nose. Aromas of white fruit stand out, with the flowery notes. In the mouth, the freshness that gives it balance and dynamism stands out. A Verdejo that will give a lot to talk about.

When we talking about the Rueda wines, we are often referring to their white wines. The white wines produced in this region are often made with the Verdejo variety, the main variety of Rueda, planted along the Douro River and its tributaries. Rueda white wines often offer lots of floral notes, scrubland low, delicate aromas and a great acidity given by strong temperature differences between day and night. Apart from white wine, Rueda also produces red wine, often made with the Tempranillo variety.
