Juvé & Camps La Capella is an excellently made cava.
It is a single variety Xarel·lo produced by winery Juvé & Camps in Sant Sadurní d'Anoia, one of the most prestigious wineries when it comes to the production of Gran Reserva cavas.

The grapes grow in a unique estate, La Capella, a little more than 7 hectares planted in 1972 in calcareous soils.
The harvest is done completely by hand, and transported to the winery in small crates that guarantee that the grapes will be in a perfect condition when they arrive at the winery.
The grapes are obtained by passing through a strict selection process. Once they have been selected there is a soft pressing.
Once the must is obtained, it is left to settle for 24 hours before adding specific yeast to enhance the Xarel·lo aromas.

Juvé & Camps La Capella undergoes an aging in pupitres for more than 9 years.
The resultant cava is a complex and fresh cava with an excellent carbonic integration.

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
